  • 1 lb rigatoni pasta uncooked
  • 1 lb Italian sausage casings removed
  • 2 cups marinara sauce store-bought or homemade
  • 1.5 cups mozzarella cheese shredded
  • 0.5 cup Parmesan cheese grated
  • 1 tbsp olive oil extra virgin
  • 2 garlic cloves minced
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 0.5 tsp red pepper flakes optional
  • 0.25 tsp salt to taste
  • 0.25 tsp black pepper freshly ground
  • 0.25 cup fresh parsley chopped for garnish

Instructions

Preparation Steps

  • Preheat your oven to 375°F (190°C).
  • Cook the rigatoni according to the package instructions until al dente. Drain and set aside.
  • In a large skillet, heat the olive oil over medium heat. Add the sausage and cook until browned and cooked through, about 6-8 minutes, breaking it apart with a spatula.
  • Add the minced garlic to the skillet and sauté for about 1 minute until fragrant.
  • Stir in the marinara sauce, basil, oregano, red pepper flakes, salt, and black pepper. Let the sauce simmer for about 5 minutes.
  • In a large bowl, combine the cooked rigatoni, sausage sauce mixture, and half of the mozzarella cheese. Mix until everything is well combined.
  • Transfer the pasta mixture to a greased 9x13 inch baking dish. Top with the remaining mozzarella and Parmesan cheese.
  • Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
  • Garnish with fresh parsley before serving. Enjoy hot.

Notes

This dish pairs well with a simple green salad and crusty bread. Feel free to add your favorite vegetables to the sauce for additional flavor and nutrition.
