  • 1.5 lb salmon fillets skin on or off
  • 1.5 tbsp olive oil
  • 1.5 tbsp unsalted butter, melted
  • 2.5 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • 1 tbsp Dijon mustard
  • 1.5 tsp honey
  • 2 tsp minced garlic
  • 1 tsp kosher salt
  • 0.75 tsp black pepper
  • 0.5 tsp paprika optional
  • 1.5 tbsp chopped fresh parsley

Instructions

Preparation Steps

  • Heat oven to 400°F. Line a rimmed baking sheet with foil and lightly oil it.
  • Pat salmon dry. Place fillets on the sheet, skin-side down, spaced slightly apart.
  • Whisk olive oil, melted butter, lemon juice, zest, Dijon, honey, garlic, salt, pepper, and paprika.
  • Spoon the mixture over salmon, coating the tops evenly.
  • Bake 12–15 minutes, until the salmon flakes easily and is just opaque in the center.
  • Rest 3 minutes. Sprinkle with parsley and serve with extra lemon if you like.

Notes

Variation: Swap parsley for fresh dill, or add a pinch of red pepper flakes for heat. Serving tip: Pair with roasted asparagus and garlic rice. Leftovers keep well refrigerated for up to 2 days; flake into salads or wraps.
