Ingredients

Main Ingredients

  • 1 large avocado halved and pitted
  • 2 eggs large
  • 1 pinch salt to taste
  • 1 pinch black pepper freshly ground, to taste
  • 1 tablespoon chives chopped, for garnish
  • 1 tablespoon bacon bits optional

Instructions

Preparation Steps

  • Preheat the oven to 425°F (220°C).
  • Scoop out some of the avocado flesh from each half to create space for the egg. Place the avocado halves in a small baking dish to keep them upright.
  • Crack an egg into each avocado half, being careful not to spill the yolk.
  • Season with salt and black pepper.
  • Bake in the preheated oven for 12-15 minutes, or until the egg white is set and yolk is cooked to your preference.
  • Garnish with chopped chives and bacon bits, if desired, before serving.

Notes

Ensure the avocados you use are firm yet ripe to support the egg without collapsing during baking.
