  • 1 lb boneless skinless chicken breasts cut into 1-inch cubes
  • 2 tbsp olive oil
  • 2 tbsp soy sauce low sodium preferred
  • 2 tbsp lemon juice freshly squeezed
  • 2 cloves garlic minced
  • 1 tsp paprika smoked or sweet
  • 1 tsp dried oregano
  • 0.5 tsp black pepper freshly ground
  • 0.5 tsp salt
  • 1 unit red bell pepper cut into 1-inch pieces
  • 1 unit green bell pepper cut into 1-inch pieces
  • 1 unit red onion cut into wedges
  • 8 unit wooden skewers soaked in water for 10 minutes

Instructions

Preparation Steps

  • In a large bowl, combine olive oil, soy sauce, lemon juice, garlic, paprika, oregano, salt, and black pepper.
  • Add chicken pieces to the marinade and toss to coat. Cover and let it marinate in the refrigerator for at least 30 minutes.
  • Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Thread a piece of chicken onto a skewer, followed by a piece of red bell pepper, green bell pepper, and red onion. Repeat until the skewer is filled. Continue with the remaining skewers.
  • Place the skewers on the prepared baking sheet and bake in the preheated oven for 12-15 minutes or until the chicken is cooked through.
  • Remove from the oven and let the skewers rest for 5 minutes before serving.

Notes

These skewers can be served with a side salad or over rice for a complete meal. Adjust the spices to your liking for different flavor profiles.
