Preparation Steps
In a large bowl, combine olive oil, soy sauce, lemon juice, garlic, paprika, oregano, salt, and black pepper.
Add chicken pieces to the marinade and toss to coat. Cover and let it marinate in the refrigerator for at least 30 minutes.
Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
Thread a piece of chicken onto a skewer, followed by a piece of red bell pepper, green bell pepper, and red onion. Repeat until the skewer is filled. Continue with the remaining skewers.
Place the skewers on the prepared baking sheet and bake in the preheated oven for 12-15 minutes or until the chicken is cooked through.
