This easy baked chicken and rice recipe is a comforting and simple meal perfect for busy weeknights. Seasoned chicken baked to perfection over fluffy rice makes for a satisfying and delicious dish.
In a large oven-proof skillet, heat olive oil over medium-high heat. Sear the chicken thighs skin-side down until golden brown, about 5 minutes. Remove and set aside.
In the same skillet, add the chopped onion and garlic. Sauté until the onion becomes translucent, about 2 minutes.
Add the rice to the skillet and stir to coat with the onion and garlic. Pour in the chicken broth and bring to a simmer.
Place the seared chicken thighs back into the skillet on top of the rice. Sprinkle with paprika, salt, and black pepper.
Cover the skillet with a lid or foil and transfer to the preheated oven. Bake for 35-40 minutes or until the rice is tender and the chicken is cooked through.
Remove the skillet from the oven and let it sit for 5 minutes. Garnish with chopped parsley before serving.
