Instructions
Preparation Steps
Place eggs in a single layer in a saucepan and cover with enough water.
Bring to a boil over medium-high heat, then cover, remove from heat, and let stand for 9-10 minutes.
Transfer eggs to an ice bath to cool completely before peeling.
Slice eggs in half lengthwise and remove yolks to a bowl.
Mash yolks with mayonnaise, mustard, salt, and pepper until smooth.
Spoon or pipe mixture back into egg whites and top with crumbled bacon.
Garnish with paprika and chives, if using.
Notes
For a twist, try adding a dash of cayenne pepper for some heat.
