  • 12 large eggs
  • 0.33 cup mayonnaise
  • 1 tablespoon yellow mustard
  • 4 strips bacon cooked and crumbled
  • 0.25 teaspoon salt or to taste
  • 0.25 teaspoon black pepper freshly ground
  • 0.25 teaspoon paprika for garnish
  • 1 tablespoon fresh chives chopped, optional

Instructions

Preparation Steps

  • Place eggs in a single layer in a saucepan and cover with enough water.
  • Bring to a boil over medium-high heat, then cover, remove from heat, and let stand for 9-10 minutes.
  • Transfer eggs to an ice bath to cool completely before peeling.
  • Slice eggs in half lengthwise and remove yolks to a bowl.
  • Mash yolks with mayonnaise, mustard, salt, and pepper until smooth.
  • Spoon or pipe mixture back into egg whites and top with crumbled bacon.
  • Garnish with paprika and chives, if using.

Notes

For a twist, try adding a dash of cayenne pepper for some heat.
