Heat oil in a large oven-safe skillet over medium-high heat. Add chicken breasts, season with salt and pepper, and sear until golden brown on both sides.
In a bowl, mix together apricot preserves, soy sauce, and garlic powder. Pour mixture over the chicken.
Transfer skillet to the preheated oven and bake for 30 minutes, or until chicken is cooked through and juices run clear.
Serve warm, garnished with fresh herbs if desired.
