  • 1 cup applesauce unsweetened
  • 0.75 cup granulated sugar
  • 0.5 cup vegetable oil
  • 2 teaspoons baking powder
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon ground cinnamon
  • 0.25 teaspoon ground nutmeg
  • 0.25 teaspoon salt
  • 2 large eggs room temperature
  • 1 teaspoon vanilla extract

Instructions

Preparation Steps

  • Preheat oven to 350°F (175°C). Line a muffin tin with paper liners.
  • In a large bowl, mix together flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.
  • In another bowl, whisk together applesauce, vegetable oil, eggs, and vanilla extract until well combined.
  • Gradually mix the wet ingredients into the dry ingredients until just combined.
  • Divide the batter evenly among the prepared muffin cups.
  • Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
  • Let muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

For a healthier option, replace half of the all-purpose flour with whole wheat flour.
