  • 1 tbsp lemon juice to keep apples from browning
  • 1.25 cup all-purpose flour
  • 2 tbsp granulated sugar for batter
  • 1.25 tsp baking powder
  • 0.75 tsp ground cinnamon for batter
  • 0.25 tsp fine salt
  • 0.75 cup milk
  • 3.5 oz eggs, lightly beaten about 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup neutral oil, for frying such as canola or vegetable
  • 0.33 cup granulated sugar for coating
  • 0.5 tsp ground cinnamon for coating
  • 2 tbsp powdered sugar optional, for dusting

Preparation Steps

  • Prep apples: Peel, core, and slice into 1/4-inch rings. Toss with lemon juice and pat dry.
  • Whisk flour, 2 tbsp sugar, baking powder, 3/4 tsp cinnamon, and salt in a bowl.
  • In another bowl, whisk milk, beaten eggs, and vanilla until smooth.
  • Combine wet with dry to form a thick, pourable batter. Rest 5 minutes.
  • Heat oil in a wide skillet to about 350°F. Mix coating sugar and 1/2 tsp cinnamon in a shallow dish.
  • Dip apple rings in batter, letting excess drip. Fry in batches 1–2 minutes per side until golden.
  • Drain on a rack. While warm, toss in cinnamon sugar or dust with powdered sugar.

Notes

Try a maple glaze instead of cinnamon sugar, or add a pinch of nutmeg to the batter. For a lighter version, air-fry at 375°F for 6–8 minutes, flipping halfway, lightly misting with oil. Serve warm with vanilla ice cream or salted caramel. Store leftovers in an airtight container and reheat in a 350°F oven for 5–7 minutes to re-crisp.
