  • 1 cup cranberries fresh or frozen
  • 1 cup apple diced, use your preferred variety
  • 1 tablespoon olive oil
  • 2 cloves garlic minced
  • 1 teaspoon thyme dried
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.5 cup chicken broth low-sodium
  • 2 tablespoons honey
  • 0.25 cup onion chopped
  • 1 tablespoon apple cider vinegar

Instructions

Preparation Steps

  • Preheat oven to 375°F (190°C).
  • Heat olive oil in a large skillet over medium-high heat.
  • Add chicken breasts and cook until golden brown on both sides. Remove from skillet and set aside.
  • In the same skillet, add garlic and onion, sautée until fragrant.
  • Add diced apple, cranberries, thyme, salt, and black pepper.
  • Stir in chicken broth, honey, and apple cider vinegar. Bring to a boil.
  • Return chicken to the skillet, spooning some of the sauce over the chicken.
  • Transfer the skillet to the oven and bake for 20-25 minutes, until the chicken is cooked through.
  • Serve warm, garnished with additional thyme if desired.
