This stuffed bell peppers recipe is an easy, healthy, and flavorful dinner that will satisfy the whole family. It's filled with a savory blend of rice, ground beef, and spices, all baked in sweet and tender bell peppers.
Preheat the oven to 375°F (190°C). Cut the tops off the bell peppers and remove seeds and membranes.
In a large skillet, cook the ground beef and onion over medium heat until the beef is browned. Drain excess fat.
Stir in garlic, cooked rice, tomato sauce, salt, black pepper, oregano, and basil. Simmer for 5 minutes.
Place the bell peppers in a baking dish and stuff them with the beef mixture. Top each with shredded mozzarella cheese.
Cover the dish with foil and bake for 30 minutes. Remove foil and bake for an additional 10-15 minutes, until the peppers are tender and the cheese is bubbly.
Notes
For a vegetarian version, substitute the ground beef with a mix of black beans and corn.
