  • 4 bell peppers any color
  • 1 lb ground beef
  • 1 cup cooked rice
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 cup tomato sauce
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp oregano
  • 0.5 tsp basil
  • 1 cup shredded mozzarella cheese

Instructions

Preparation Steps

  • Preheat the oven to 375°F (190°C). Cut the tops off the bell peppers and remove seeds and membranes.
  • In a large skillet, cook the ground beef and onion over medium heat until the beef is browned. Drain excess fat.
  • Stir in garlic, cooked rice, tomato sauce, salt, black pepper, oregano, and basil. Simmer for 5 minutes.
  • Place the bell peppers in a baking dish and stuff them with the beef mixture. Top each with shredded mozzarella cheese.
  • Cover the dish with foil and bake for 30 minutes. Remove foil and bake for an additional 10-15 minutes, until the peppers are tender and the cheese is bubbly.

Notes

For a vegetarian version, substitute the ground beef with a mix of black beans and corn.
