  • 1.5 cups old-fashioned oats ground into flour
  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1 cup milk or any non-dairy milk
  • 2 whole eggs beaten
  • 1 teaspoon vanilla extract
  • 2 tablespoons vegetable oil
  • 0.5 cup unsweetened applesauce

Instructions

Preparation Steps

  • In a blender, combine oats and blend to a fine flour.
  • In a large bowl, mix oat flour, all-purpose flour, sugar, baking powder, baking soda, and salt.
  • In another bowl, whisk together milk, eggs, vanilla extract, vegetable oil, and applesauce.
  • Pour wet ingredients into dry ingredients and stir until just combined.
  • Heat a non-stick skillet over medium heat and lightly grease it. Pour 1/4 cup batter for each pancake onto the skillet.
  • Cook until bubbles form on top, then flip and cook until golden brown. Repeat with remaining batter.

Notes
