Instructions
Preparation Steps
Preheat the oven to 400°F (200°C).
In a small bowl, combine olive oil, garlic, rosemary, thyme, salt, and pepper.
Rub the mixture all over the lamb chops and let them marinate for at least 10 minutes.
Heat a skillet over medium-high heat and sear the lamb chops on each side for about 2-3 minutes until a brown crust forms.
Transfer the skillet to the preheated oven and roast for another 5-7 minutes for medium-rare.
Remove from the oven and drizzle with lemon juice before serving.
Notes
For a more intense flavor, let the lamb chops marinate in the refrigerator for up to 4 hours.
