  • 2 tbsp olive oil extra virgin
  • 4 cloves garlic minced
  • 1 tsp rosemary dried or 1 tbsp fresh
  • 1 tsp thyme dried or 1 tbsp fresh
  • 1 tsp salt to taste
  • 0.5 tsp black pepper freshly ground
  • 1 tbsp lemon juice

Instructions

Preparation Steps

  • Preheat the oven to 400°F (200°C).
  • In a small bowl, combine olive oil, garlic, rosemary, thyme, salt, and pepper.
  • Rub the mixture all over the lamb chops and let them marinate for at least 10 minutes.
  • Heat a skillet over medium-high heat and sear the lamb chops on each side for about 2-3 minutes until a brown crust forms.
  • Transfer the skillet to the preheated oven and roast for another 5-7 minutes for medium-rare.
  • Remove from the oven and drizzle with lemon juice before serving.

Notes

For a more intense flavor, let the lamb chops marinate in the refrigerator for up to 4 hours.
