  • 1.5 cups long-grain white rice uncooked, rinsed
  • 2 tablespoons olive oil
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • 1 cup tomato sauce
  • 2 cups chicken broth
  • 1 teaspoon ground cumin
  • 0.5 teaspoon paprika
  • 0.25 teaspoon salt to taste
  • 0.25 teaspoon black pepper to taste
  • 0.5 cup frozen peas optional
  • 0.25 cup chopped cilantro for garnish

Instructions

Preparation Steps

  • Turn on the Instant Pot and select the 'Sauté' function. Add olive oil and once hot, add the chopped onions. Sauté for 2-3 minutes until translucent.
  • Add minced garlic and sauté for another minute until fragrant.
  • Add the rice and stir for 2 minutes until the rice is slightly toasted.
  • Stir in tomato sauce, chicken broth, cumin, paprika, salt, and black pepper. Mix well.
  • Cancel the 'Sauté' function. Secure the lid and set the Instant Pot to 'Manual' or 'Pressure Cook' on high for 10 minutes.
  • Let the pressure release naturally for 5 minutes, then use the quick release. Carefully remove the lid.
  • Stir in frozen peas if using. Let them warm through with the heat of the rice.
  • Fluff the rice with a fork and garnish with chopped cilantro before serving.

Notes

This is a versatile Spanish rice recipe that pairs well with tacos, grilled meats, or enchiladas. Adjust the spices to your liking.
