Instructions
Preparation Steps
Turn on the Instant Pot and select the 'Sauté' function. Add olive oil and once hot, add the chopped onions. Sauté for 2-3 minutes until translucent.
Add minced garlic and sauté for another minute until fragrant.
Add the rice and stir for 2 minutes until the rice is slightly toasted.
Stir in tomato sauce, chicken broth, cumin, paprika, salt, and black pepper. Mix well.
Cancel the 'Sauté' function. Secure the lid and set the Instant Pot to 'Manual' or 'Pressure Cook' on high for 10 minutes.
Let the pressure release naturally for 5 minutes, then use the quick release. Carefully remove the lid.
Stir in frozen peas if using. Let them warm through with the heat of the rice.
Fluff the rice with a fork and garnish with chopped cilantro before serving.
