  • 1.5 lb asparagus trimmed and cut into 1-inch pieces
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • 4 cups chicken broth or vegetable broth
  • 0.5 cup heavy cream
  • 2 tbsp olive oil
  • 1 tsp salt to taste
  • 0.5 tsp black pepper freshly ground
  • 1 tbsp lemon juice
  • 2 tbsp fresh parsley chopped, for garnish

Instructions

Preparation Steps

  • Heat olive oil in a large pot over medium heat. Add onion and garlic, and sauté until onion is translucent, about 5 minutes.
  • Add asparagus pieces to the pot, and continue cooking for another 5 minutes, stirring occasionally.
  • Pour in chicken broth and bring to a boil. Reduce heat and let simmer for 15 minutes, or until asparagus is tender.
  • Remove the pot from heat, and use an immersion blender to blend the soup until smooth. Stir in heavy cream, salt, and pepper.
  • Return the pot to low heat, and stir in lemon juice. Adjust seasoning as necessary.
  • Serve hot, garnished with fresh parsley.

Notes

For a vegan version, use vegetable broth and replace heavy cream with coconut milk.
