Instructions
Preparation Steps
Heat olive oil in a large pot over medium heat. Add onion and garlic, and sauté until onion is translucent, about 5 minutes.
Add asparagus pieces to the pot, and continue cooking for another 5 minutes, stirring occasionally.
Pour in chicken broth and bring to a boil. Reduce heat and let simmer for 15 minutes, or until asparagus is tender.
Remove the pot from heat, and use an immersion blender to blend the soup until smooth. Stir in heavy cream, salt, and pepper.
Return the pot to low heat, and stir in lemon juice. Adjust seasoning as necessary.
Serve hot, garnished with fresh parsley.
Notes
For a vegan version, use vegetable broth and replace heavy cream with coconut milk.
