  • 6 small russet potatoes cleaned
  • 2 tablespoons olive oil
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper freshly ground
  • 1 cup cheddar cheese shredded
  • 0.5 cup sour cream
  • 3 slices bacon cooked and crumbled
  • 2 tablespoons green onions sliced

Instructions

Preparation Steps

  • Preheat the air fryer to 400°F.
  • Pierce the potatoes with a fork and microwave for about 5 minutes until slightly soft.
  • Cut the potatoes in half lengthwise and scoop out the center, leaving about 1/4 inch of potato on the skin.
  • Brush the potato skins with olive oil and sprinkle with salt and pepper.
  • Place the skins in the air fryer basket and cook for 10 minutes, or until crispy.
  • Remove skins from the air fryer, sprinkle cheese evenly over them, and return to the air fryer for 2-3 minutes until the cheese melts.
  • Top with sour cream, bacon crumbles, and green onions before serving.
