Instructions
Preparation Steps
Preheat the air fryer to 400°F.
Pierce the potatoes with a fork and microwave for about 5 minutes until slightly soft.
Cut the potatoes in half lengthwise and scoop out the center, leaving about 1/4 inch of potato on the skin.
Brush the potato skins with olive oil and sprinkle with salt and pepper.
Place the skins in the air fryer basket and cook for 10 minutes, or until crispy.
Remove skins from the air fryer, sprinkle cheese evenly over them, and return to the air fryer for 2-3 minutes until the cheese melts.
Top with sour cream, bacon crumbles, and green onions before serving.
