  • 1 can chicken breast 12.5 oz, drained and shredded
  • 1 can black beans 15 oz, rinsed
  • 1 can pinto beans 15 oz, rinsed
  • 1 can corn 15 oz, drained
  • 1 can diced tomatoes 14.5 oz
  • 1 can tomato sauce 10 oz
  • 1 can green chilies 4 oz, chopped
  • 1 packet taco seasoning 1 oz
  • 1 teaspoon cumin
  • 1 cup chicken broth low sodium
  • 0.5 teaspoon salt or to taste
  • 0.25 teaspoon black pepper
  • 1 tablespoon olive oil for garnish, optional
  • 1 tablespoon fresh cilantro chopped, optional

Instructions

Preparation Steps

  • In a large pot, add the olive oil and heat over medium heat.
  • Add the chicken broth, taco seasoning, cumin, salt, and pepper. Stir until well combined.
  • Stir in the chicken, black beans, pinto beans, corn, diced tomatoes, tomato sauce, and green chilies. Bring to a boil.
  • Reduce heat to simmer, cover, and cook for 20 minutes. Stir occasionally.
  • Serve hot, garnished with chopped cilantro if desired.
