  • 1 cup sugar
  • 0.5 cup unsalted butter, melted
  • 0.75 cup chopped pistachios
  • 1 cup milk
  • 2 large eggs
  • 2 teaspoons baking powder
  • 0.5 teaspoon salt

Preparation Steps

  • Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  • In a bowl, whisk together flour, baking powder, and salt.
  • In another bowl, combine melted butter, sugar, eggs, and milk until well mixed.
  • Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  • Fold in the chopped pistachios.
  • Spoon the batter into the prepared muffin tin, filling each liner about 2/3 full.
  • Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  • Let cool in the pan for 5 minutes before transferring to a wire rack to cool completely.

Notes

These muffins can be served warm or cooled. Try adding chocolate chips for an extra treat!
