Instructions
Preparation Steps
In a large pot, heat olive oil over medium heat. Add onions, carrots, and celery, and sauté for 5 minutes.
Stir in garlic and cook for another minute.
Add vegetable broth, diced tomatoes, and Italian seasoning. Bring to a boil.
Reduce heat to simmer, add zucchini, and cook for 15 minutes.
Add pasta and cannellini beans, and cook until pasta is tender.
Serve hot and enjoy!

You can add spinach at the last minute for extra greens.
