  • 1 cup carrots sliced
  • 1 cup celery chopped
  • 1 cup onion diced
  • 2 cloves garlic minced
  • 4 cups vegetable broth
  • 1 can diced tomatoes 14 oz can
  • 1 cup zucchini sliced
  • 1 cup pasta small shells
  • 1 tsp Italian seasoning
  • 1 can cannellini beans drained and rinsed

Instructions

Preparation Steps

  • In a large pot, heat olive oil over medium heat. Add onions, carrots, and celery, and sauté for 5 minutes.
  • Stir in garlic and cook for another minute.
  • Add vegetable broth, diced tomatoes, and Italian seasoning. Bring to a boil.
  • Reduce heat to simmer, add zucchini, and cook for 15 minutes.
  • Add pasta and cannellini beans, and cook until pasta is tender.
  • Serve hot and enjoy!

Notes

You can add spinach at the last minute for extra greens.
