Ingredients
 

  • 2 lbs baby potatoes or small Yukon gold potatoes, halved
  • 1/3 cup grated Parmesan cheese
  • 1/4 cup breadcrumbs panko recommended for extra crunch
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon dried thyme or Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Chopped fresh parsley for garnish

Instructions

  • Preheat Oven:
  • Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray.
  • Prepare the Potatoes:
  • In a large mixing bowl, toss the halved potatoes with olive oil to coat evenly.
  • Make the Parmesan Mixture:
  • In a separate bowl, combine the Parmesan cheese, breadcrumbs, garlic powder, paprika, thyme, salt, and pepper.
  • Coat the Potatoes:
  • Toss the oiled potatoes in the Parmesan mixture until well-coated.
  • Arrange on Baking Sheet:
  • Place the potatoes cut-side down on the prepared baking sheet. Press gently to ensure good contact with the sheet for maximum crispiness.
  • Bake:
  • Bake in the preheated oven for 35-40 minutes, or until the potatoes are golden brown and crispy. Check for doneness with a fork; they should be tender inside.
  • Garnish and Serve:
  • Sprinkle with fresh parsley before serving. Serve hot as a side dish to your favorite meal.
