  • 1.25 lb boneless pork chops (about 1-inch thick) pat dry for best crust
  • 2 tbsp mayonnaise helps crumbs stick
  • 1 cup panko breadcrumbs for extra crunch
  • 0.33 cup grated Parmesan cheese
  • 1.33 tbsp olive oil, divided 1 tbsp for crumbs, 1 tsp for basket
  • 1.5 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp kosher salt adjust to taste
  • 0.75 tsp ground black pepper
  • 0.25 tsp cayenne pepper optional, for heat

Instructions

Preparation Steps

  • Preheat the air fryer to 400°F for 5 minutes.
  • Stir panko, Parmesan, 1 tbsp olive oil, paprika, garlic powder, onion powder, salt, pepper, and cayenne in a shallow bowl.
  • Pat pork chops dry. Rub a thin layer of mayonnaise over both sides.
  • Press each chop into the crumb mix, coating well and shaking off any excess.
  • Brush the air fryer basket with the remaining 1 tsp olive oil. Arrange chops in a single layer.
  • Air fry 10–12 minutes, flipping halfway, until the center reaches 145°F.
  • Rest chops 5 minutes so juices settle, then serve hot.

Notes

Try a smoky twist by swapping paprika for smoked paprika, or add lemon zest to the crumbs. For extra juiciness, brine chops in lightly salted water for 30 minutes, then pat dry before breading. Leftovers reheat well at 350°F in the air fryer for 3–4 minutes.
