For the White Sauce:

  • 1/2 cup unsalted butter
  • 1/2 cup all-purpose flour
  • 4 cups whole milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried oregano

For the Chicken Filling:

  • 1.5 pounds boneless skinless chicken breasts, cooked and shredded
  • 1 tablespoon olive oil
  • 1 large onion finely chopped
  • 3 cloves garlic minced
  • 1 cup frozen spinach thawed and drained
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Salt and black pepper to taste

For Assembly:

  • 9 lasagna noodles cooked according to package instructions
  • 1 cup shredded mozzarella cheese
  • Fresh basil or parsley for garnish

Instructions

White Sauce:

  • In a saucepan, melt the unsalted butter over medium heat. Add the flour and whisk continuously to form a smooth paste.
  • Gradually pour in the whole milk, whisking constantly to avoid lumps. Continue cooking and whisking until the sauce thickens.
  • Add salt, black pepper, garlic powder, onion powder, and dried oregano to the white sauce. Stir well and remove from heat.

Chicken Filling:

  • In a skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, sautéing until softened.
  • Incorporate the shredded chicken, followed by the thawed and drained spinach. Cook until heated through.
  • Stir in ricotta cheese, shredded mozzarella, and grated Parmesan until the cheeses are melted and the mixture is well combined. Season with salt and black pepper to taste.

Assembly:

  • Preheat your oven to 375°F (190°C).
  • In a greased baking dish, spread a thin layer of the white sauce. Place three cooked lasagna noodles on top.
  • Layer half of the chicken filling over the noodles, followed by a portion of the white sauce. Repeat the process with another layer of noodles, the remaining chicken filling, and more white sauce.
  • Top the lasagna with the final layer of noodles, remaining white sauce, and shredded mozzarella cheese.
  • Bake in the preheated oven for 25-30 minutes or until the top is golden and bubbly.
