Ingredients
 

  • For the Chicken:
  • 4 boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • 3 cloves garlic minced
  • 1 teaspoon Italian seasoning
  • Salt and black pepper to taste
  • 1/2 teaspoon paprika optional
  • For the Garlic Parmesan Rice:
  • 1 cup long-grain white rice
  • 2 cups chicken broth or water
  • 2 tablespoons unsalted butter
  • 3 cloves garlic minced
  • 1/2 cup grated Parmesan cheese
  • Salt and black pepper to taste
  • Fresh parsley chopped (for garnish)

Instructions

  • Cook the Chicken:
  • Preheat Oven: Preheat your oven to 400°F (200°C).
  • Season the Chicken: In a bowl, season the chicken breasts with salt, black pepper, paprika (if using), Italian seasoning, and minced garlic. Drizzle with olive oil and rub the seasonings into the chicken.
  • Sear the Chicken: In a large oven-safe skillet, heat the olive oil over medium-high heat. Add the seasoned chicken breasts and sear for 3-4 minutes on each side until golden brown.
  • Transfer to Oven: Transfer the skillet to the preheated oven and bake for about 20 minutes, or until the internal temperature reaches 165°F (74°C).
  • Prepare the Garlic Parmesan Rice:
  • Sauté Garlic: In a medium saucepan, melt the butter over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  • Add Rice and Broth: Stir in the rice, followed by the chicken broth. Bring to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes, or until the rice is cooked and the liquid is absorbed.
  • Add Parmesan: Once the rice is cooked, remove it from heat and stir in the grated Parmesan cheese. Season with salt and black pepper to taste.
  • Serve:
  • Plate the Dish: Serve the baked chicken breasts over a bed of garlic Parmesan rice. Garnish with chopped fresh parsley.
