  • 8 ounces pasta penne or rotini recommended
  • 2 cups diced tomatoes fresh or canned
  • 1 pound chicken breast cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 1 cup basil fresh, chopped
  • 0.5 teaspoon salt to taste
  • 0.25 teaspoon black pepper to taste

Instructions

Preparation Steps

  • Cook the pasta according to package instructions, then drain and set aside.
  • In a large skillet, heat olive oil over medium heat.
  • Add the chicken and cook until browned and cooked through, about 6-8 minutes.
  • Add the diced tomatoes, basil, salt, and pepper, and cook for 5 minutes until the mixture is heated through.
  • Toss the cooked pasta with the chicken and tomato mixture in the skillet.
  • Serve warm, garnished with additional basil, if desired.

Notes

For a spicier version, add red pepper flakes to taste.
