  • 12 oz jumbo pasta shells
  • 1 lb ground beef 85% lean
  • 1 packet taco seasoning
  • 2 cups salsa
  • 1.5 cups shredded cheddar cheese
  • 0.5 cups cream cheese softened
  • 1 tablespoon olive oil
  • 0.5 teaspoon salt to taste
  • 0.25 teaspoon black pepper to taste
  • 2 tablespoons fresh cilantro chopped, for garnish
  • 2 cups shredded lettuce for serving

Instructions

Preparation Steps

  • Preheat your oven to 350°F (175°C).
  • Cook the pasta shells according to package instructions until al dente. Drain and set aside.
  • In a large skillet, heat olive oil over medium heat. Add ground beef and cook until browned, breaking it apart with a spatula.
  • Stir in the taco seasoning and 1/2 cup of salsa into the cooked beef. Simmer for 5 minutes.
  • Remove the beef mixture from heat and mix in the cream cheese until well combined.
  • Fill each pasta shell with the beef mixture and place them in a baking dish.
  • Pour the remaining salsa over the stuffed shells, then sprinkle with cheddar cheese.
  • Bake uncovered in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.
  • Garnish with chopped cilantro and serve with shredded lettuce.

Notes

Feel free to adjust the spice level by using mild, medium, or hot salsa.
