  • 1 cup crushed pineapple well drained
  • 0.5 cup mayonnaise
  • 0.25 cup plain Greek yogurt
  • 1.5 tbsp honey
  • 1 tbsp apple cider vinegar
  • 0.5 tsp kosher salt
  • 0.25 tsp ground black pepper
  • 0.5 cup chopped pecans optional

Preparation Steps

  • Drain the pineapple thoroughly, pressing it in a sieve to remove excess juice.
  • Whisk the mayonnaise, yogurt, honey, vinegar, salt, and pepper in a large bowl.
  • Add carrots, raisins, pineapple, and pecans if using. Fold until everything is coated.
  • Chill 20–30 minutes to meld flavors. Taste and adjust seasoning before serving.

Notes

Variation: Swap pecans for sunflower seeds, or add a small chopped apple for extra crunch. For a lighter salad, use more yogurt and less mayonnaise. Store in an airtight container in the fridge for up to 3 days; stir before serving.
