  • 12 pieces button mushrooms stems removed
  • 1.5 cups cherry tomatoes halved
  • 1 cup mozzarella cheese diced
  • 0.25 cup fresh basil chopped
  • 2 tablespoons olive oil
  • 1 teaspoon balsamic vinegar
  • 0.5 teaspoon salt or to taste
  • 0.25 teaspoon black pepper freshly ground

Instructions

Preparation Steps

  • Preheat the oven to 375°F (190°C).
  • Place mushrooms on a baking sheet, stem-side up.
  • In a mixing bowl, combine cherry tomatoes, mozzarella, and basil. Add olive oil, balsamic vinegar, salt, and pepper. Mix well.
  • Stuff each mushroom cap with the tomato and mozzarella mixture.
  • Bake for 15-20 minutes, until cheese has melted and mushrooms are tender.
  • Serve warm, garnished with extra basil if desired.

Notes

For an extra kick, add a pinch of red pepper flakes to the filling mixture.
