Instructions
Preparation Steps
Preheat the oven to 375°F (190°C).
Place mushrooms on a baking sheet, stem-side up.
In a mixing bowl, combine cherry tomatoes, mozzarella, and basil. Add olive oil, balsamic vinegar, salt, and pepper. Mix well.
Stuff each mushroom cap with the tomato and mozzarella mixture.
Bake for 15-20 minutes, until cheese has melted and mushrooms are tender.
Serve warm, garnished with extra basil if desired.
Notes
For an extra kick, add a pinch of red pepper flakes to the filling mixture.
