Ingredients
 

  • 2 cups broccoli florets steamed and finely chopped
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup all-purpose flour or almond flour for a low-carb option
  • 2 large eggs
  • 1 clove garlic minced
  • 1/4 cup green onions finely chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Olive oil for frying

Instructions

  • Steam the Broccoli: Steam the broccoli florets until tender, about 4-5 minutes. Let them cool slightly, then finely chop.
  • Mix the Ingredients: In a large bowl, combine the chopped broccoli, Parmesan cheese, flour, eggs, minced garlic, green onions, salt, and black pepper. Stir until everything is well combined and a thick batter forms.
  • Form the Fritters: Using your hands or a spoon, shape the mixture into small patties or fritters, about 2-3 inches wide.
  • Heat the Oil: Heat about 2 tablespoons of olive oil in a large skillet over medium heat.
  • Cook the Fritters: Once the oil is hot, carefully add the broccoli fritters to the skillet in batches. Cook for about 3-4 minutes on each side, or until they are golden brown and crispy.
  • Drain and Serve: Remove the fritters from the skillet and drain on a paper towel-lined plate. Repeat with the remaining mixture, adding more oil if necessary.
  • Serve: Serve the broccoli fritters warm, with your favorite dipping sauce like sour cream, Greek yogurt, or ranch.
