Ingredients

  • For the Bread:
  • 1.5 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/2 cup whole milk
  • 1/4 cup fresh lemon juice
  • Zest of 1 large lemon
  • 1 teaspoon vanilla extract
  • For the Lemon Glaze:
  • 1 cup powdered sugar
  • 2-3 tablespoons fresh lemon juice
  • Zest of 1 lemon optional, for garnish

Instructions

  • Prepare the Bread:
  • Preheat Oven:
  • Preheat your oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan, or line it with parchment paper.
  • Mix Dry Ingredients:
  • In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  • Cream Butter and Sugar:
  • In a large bowl, beat the softened butter and sugar together until light and fluffy. Add the eggs, one at a time, mixing well after each addition.
  • Add Wet Ingredients:
  • Mix in the lemon juice, lemon zest, and vanilla extract. Gradually add the dry ingredients to the wet mixture, alternating with the milk. Mix until just combined.
  • Bake:
  • Pour the batter into the prepared loaf pan and smooth the top. Bake for 50-55 minutes, or until a toothpick inserted into the center comes out clean. Let the bread cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
  • Make the Lemon Glaze:
  • Prepare the Glaze:
  • In a small bowl, whisk together the powdered sugar and lemon juice until smooth. Adjust the consistency by adding more lemon juice if needed.
  • Glaze the Bread:
  • Glaze and Serve:
  • Once the bread is completely cooled, drizzle the lemon glaze over the top. Optionally, sprinkle with lemon zest for extra flavor and presentation.
