Instructions
Preparation Steps
Preheat your oven to 425°F (220°C).
Season the beef tenderloin with salt and pepper.
In a large skillet over medium-high heat, heat olive oil.
Sear the beef on all sides until browned.
Transfer the beef to a roasting pan and place it in the oven. Roast for 25-30 minutes for medium-rare.
In the same skillet, add mushrooms and garlic. Cook until mushrooms are golden.
Add beef broth and bring to a simmer, then stir in heavy cream and cook until thickened.
Slice the beef tenderloin and serve with mushroom gravy.
