Ingredients
 

  • 1 lb ground beef
  • 1 tablespoon olive oil
  • 1/2 onion diced
  • 2 cloves garlic minced
  • 2 medium zucchini sliced into half-moons
  • 1 14.5 oz can diced tomatoes, undrained
  • 1/2 cup tomato sauce
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 1/2 cups shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Optional: 1/4 teaspoon red pepper flakes or chopped fresh basil for garnish

Instructions

  • Preheat Oven:
  • Preheat to 375°F (190°C) and lightly grease a 9x13-inch baking dish.
  • Brown the Beef:
  • In a large skillet, heat olive oil over medium heat. Add ground beef and cook until browned, about 6–8 minutes. Drain excess grease if needed.
  • Add Aromatics & Zucchini:
  • Add onion and cook 2–3 minutes until softened. Stir in garlic and zucchini, and sauté for 5–6 minutes until the zucchini starts to soften.
  • Stir in Tomatoes & Seasoning:
  • Add diced tomatoes with their juices, tomato sauce, Italian seasoning, salt, pepper, and red pepper flakes (if using). Simmer for 5–7 minutes to blend flavors.
  • Assemble the Casserole:
  • Spoon the beef and zucchini mixture into the prepared baking dish. Top evenly with mozzarella and sprinkle with Parmesan.
  • Bake:
  • Bake uncovered for 25–30 minutes, or until cheese is melted and bubbly. Let rest 5–10 minutes before serving.
  • Garnish (Optional):
  • Sprinkle with chopped basil or parsley just before serving.

Notes

For extra flavor, add herbs like oregano or basil.
