  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 0.5 cup unsalted butter softened
  • 1 cup sugar
  • 2 large eggs room temperature
  • 4 medium ripe bananas mashed
  • 1 teaspoon vanilla extract
  • 0.5 cup sour cream
  • 8 ounces cream cheese softened
  • 0.25 cup unsalted butter softened, for frosting
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract for frosting

Instructions

Preparation Steps

  • Preheat the oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
  • In a medium bowl, whisk together flour, baking soda, and salt. Set aside.
  • In a large bowl, cream the softened butter and sugar until light and fluffy.
  • Add eggs, one at a time, beating well after each addition.
  • Mix in mashed bananas and vanilla extract.
  • Add the flour mixture to the banana mixture alternately with the sour cream.
  • Pour batter into prepared baking pan and bake for 60 minutes or until a toothpick comes out clean.
  • For the frosting, beat the cream cheese and butter until smooth. Add in powdered sugar and vanilla extract and beat until fluffy.
  • Once the cake is cool, spread the frosting evenly over the top. Slice and serve.
