BAKED PARMESAN ZUCCHINI FRIES

Ingredients
 

  • 3 medium zucchinis sliced into fries
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup breadcrumbs panko for extra crispiness
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon paprika optional, for extra flavor
  • Salt and black pepper to taste
  • 2 large eggs beaten
  • Cooking spray or olive oil spray
  • Marinara or ranch dressing for dipping (optional)

Instructions

  • Preheat Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper and lightly spray with cooking spray.
  • Prepare the Breading Mixture: In a shallow bowl, mix together the grated Parmesan cheese, breadcrumbs, garlic powder, Italian seasoning, paprika, salt, and black pepper.
  • Coat the Zucchini: In another shallow bowl, beat the eggs. Dip each zucchini fry into the beaten eggs, shaking off any excess. Then, coat the zucchini fry in the Parmesan breadcrumb mixture, pressing gently to help the breading adhere.
  • Arrange on Baking Sheet: Place the breaded zucchini fries in a single layer on the prepared baking sheet. Lightly spray the tops of the zucchini fries with cooking spray to help them crisp up in the oven.
  • Bake: Bake in the preheated oven for 20-25 minutes, flipping the fries halfway through, until they are golden brown and crispy.
  • Serve: Remove the zucchini fries from the oven and serve immediately with marinara or ranch dressing for dipping, if desired.
