Preparation Steps
Preheat your oven to 400°F (200°C).
Wrap each pork medallion with a slice of bacon, securing with a toothpick if necessary.
Heat olive oil in a skillet over medium-high heat and sear the medallions on each side until browned, about 2-3 minutes per side.
Transfer the medallions to a baking dish and season with salt and pepper.
Bake in the preheated oven for 15-20 minutes, or until the pork is cooked through.
Remove from oven and let rest for 5 minutes before serving.
Notes
For best results, use center-cut bacon which wraps evenly around the pork medallions.
