Preparation Steps

  • Wrap each pork medallion with a slice of bacon, securing with a toothpick if necessary.
  • Heat olive oil in a skillet over medium-high heat and sear the medallions on each side until browned, about 2-3 minutes per side.
  • Transfer the medallions to a baking dish and season with salt and pepper.
  • Bake in the preheated oven for 15-20 minutes, or until the pork is cooked through.
