  • 10 oz thick-cut bacon, chopped
  • 1 tbsp unsalted butter optional, for richness
  • 1.25 cup yellow onion, thinly sliced
  • 2 tsp garlic, minced
  • 1.5 lb green cabbage, cored and sliced
  • 1 tbsp apple cider vinegar
  • 1 tsp brown sugar
  • 0.5 tsp smoked paprika
  • 0.25 tsp crushed red pepper flakes
  • 0.75 tsp kosher salt adjust to taste
  • 0.5 tsp black pepper, freshly ground
  • 2 tbsp scallions, thinly sliced optional garnish

Instructions

Preparation Steps

  • Heat a large skillet over medium heat.
  • Cook bacon until crisp, 7–9 minutes. Transfer to a plate; leave 2 tablespoons drippings.
  • Melt the butter in the drippings if using.
  • Sauté onion with a pinch of salt until softened, about 3 minutes.
  • Stir in garlic and cook until fragrant, 30 seconds.
  • Add cabbage. Toss to coat, then cook, stirring occasionally, until tender-crisp, 8–10 minutes.
  • Season with vinegar, brown sugar, smoked paprika, red pepper, salt, and black pepper. Stir 1 minute.
  • Return bacon to the pan and toss. Taste and adjust seasoning. Garnish with scallions to serve.

Notes

Variation: Add 1 tsp caraway seeds with the onions, or swap the bacon with sliced kielbasa. For a lighter take, use turkey bacon and skip the butter. Storage: Refrigerate up to 3 days; reheat gently in a skillet to keep texture.
