  • 2.5 cups all-purpose flour sifted
  • 1 cup unsalted butter softened
  • 0.5 cup granulated sugar
  • 0.5 cup brown sugar packed
  • 1 tsp vanilla extract
  • 2 tsp apple pie spice
  • 0.5 cup apple cider reduced
  • 2 large eggs

Instructions

Preparation Steps

  • Preheat the oven to 350°F (175°C).
  • In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
  • Add in the eggs one at a time, beating well after each addition. Stir in the vanilla and apple cider.
  • Gradually add the sifted flour and apple pie spice, mixing until just combined.
  • Drop by rounded tablespoons onto ungreased baking sheets.
  • Bake for 10-12 minutes in the preheated oven, or until edges are golden brown. Remove from oven and cool on wire racks.

Notes

These cookies pair wonderfully with a warm cup of apple cider, and can be stored in an airtight container for up to a week.
