Preparation Steps
Preheat the oven to 350°F (175°C).
In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
Add in the eggs one at a time, beating well after each addition. Stir in the vanilla and apple cider.
Gradually add the sifted flour and apple pie spice, mixing until just combined.
Drop by rounded tablespoons onto ungreased baking sheets.
Bake for 10-12 minutes in the preheated oven, or until edges are golden brown. Remove from oven and cool on wire racks.
Notes
These cookies pair wonderfully with a warm cup of apple cider, and can be stored in an airtight container for up to a week.
