  • 2 lbs eggplants roasted and skinned
  • 0.5 cup olive oil
  • 2 cloves garlic minced
  • 2 tbsp vinegar white wine or apple cider

Preparation Steps

  • Roast the red bell peppers and eggplants until the skins are charred.
  • Let the vegetables cool, then peel and remove the seeds.
  • In a food processor, blend the peppers and eggplants into a smooth paste.
  • Heat olive oil in a pan over medium heat, add garlic and cook for 1 minute.
  • Add the pepper and eggplant mixture to the pan, stirring regularly for 30 minutes.
  • Stir in vinegar and salt, adjust seasoning as necessary.
  • Cool the ajvar to room temperature before serving.
