Instructions
Preparation Steps
Roast the red bell peppers and eggplants until the skins are charred.
Let the vegetables cool, then peel and remove the seeds.
In a food processor, blend the peppers and eggplants into a smooth paste.
Heat olive oil in a pan over medium heat, add garlic and cook for 1 minute.
Add the pepper and eggplant mixture to the pan, stirring regularly for 30 minutes.
Stir in vinegar and salt, adjust seasoning as necessary.
Cool the ajvar to room temperature before serving.
