Instructions
Prep the Zucchini:
Slice zucchini into even rounds, about ¼ inch thick. Pat dry with a paper towel to remove excess moisture.
Set Up Coating Station:
Place the beaten egg in one shallow bowl.
In another bowl, mix breadcrumbs, Parmesan, garlic powder, Italian seasoning, salt, and pepper.
Coat the Zucchini:
Dip each slice into the egg, letting excess drip off.
Dredge in the breadcrumb mixture, pressing gently to coat both sides.
Air Fry:
Preheat air fryer to 375°F (190°C) if required by your model.
Lightly spray the air fryer basket with olive oil spray.
Place coated zucchini slices in a single layer (you may need to cook in batches).
Spray tops lightly with oil.
Cook Time:
Air fry for 8–10 minutes, flipping halfway, until golden and crispy.
Serve:
Enjoy immediately with marinara, ranch, or your favorite dipping sauce.
