Ingredients
 

  • 2 medium zucchini sliced into ¼-inch thick rounds
  • 1 large egg beaten
  • ½ cup 0.25 lbs breadcrumbs (panko or regular)
  • ¼ cup 0.12 lbs grated Parmesan cheese
  • **½ teaspoon garlic powder
  • **½ teaspoon Italian seasoning
  • Salt & black pepper to taste
  • Olive oil spray

Instructions

  • Prep the Zucchini:
  • Slice zucchini into even rounds, about ¼ inch thick. Pat dry with a paper towel to remove excess moisture.
  • Set Up Coating Station:
  • Place the beaten egg in one shallow bowl.
  • In another bowl, mix breadcrumbs, Parmesan, garlic powder, Italian seasoning, salt, and pepper.
  • Coat the Zucchini:
  • Dip each slice into the egg, letting excess drip off.
  • Dredge in the breadcrumb mixture, pressing gently to coat both sides.
  • Air Fry:
  • Preheat air fryer to 375°F (190°C) if required by your model.
  • Lightly spray the air fryer basket with olive oil spray.
  • Place coated zucchini slices in a single layer (you may need to cook in batches).
  • Spray tops lightly with oil.
  • Cook Time:
  • Air fry for 8–10 minutes, flipping halfway, until golden and crispy.
  • Serve:
  • Enjoy immediately with marinara, ranch, or your favorite dipping sauce.
