Pumpkin Whipped Feta Dip

Ingredients
 

  • 8 oz feta cheese crumbled
  • 1/2 cup pumpkin puree not pumpkin pie filling
  • 1/4 cup plain Greek yogurt or sour cream
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • 1 teaspoon lemon juice
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cumin optional, for a savory kick
  • Salt and black pepper to taste
  • 1 tablespoon fresh parsley or chives chopped (optional, for garnish)
  • Pumpkin seeds or walnuts optional, for garnish

Instructions

  • Blend the Feta: In a food processor or blender, add the crumbled feta cheese, olive oil, and lemon juice. Blend until the mixture is smooth and creamy, scraping down the sides as needed.
  • Add Pumpkin and Spices: Add the pumpkin puree, Greek yogurt (or sour cream), honey, ground cinnamon, nutmeg, and cumin (if using) to the feta mixture. Blend again until everything is well combined and smooth. Taste and season with salt and black pepper as needed.
  • Adjust Consistency: If the dip is too thick, you can add a little more Greek yogurt or olive oil to reach your desired consistency.
  • Serve: Transfer the whipped feta dip to a serving bowl. Garnish with chopped fresh parsley or chives, and sprinkle with pumpkin seeds or walnuts if desired.
  • Enjoy: Serve the Pumpkin Whipped Feta Dip with pita chips, crackers, or fresh vegetables.
