For the Chicken Skewers:
- 1 1/2 pounds chicken breast, cut into bite-sized pieces
- Salt and pepper, to taste
- Wooden skewers, soaked in water for at least 30 minutes
For the Bang Bang Sauce:
- 1/2 cup mayonnaise
- 1/4 cup sweet chili sauce
- 2 tablespoons honey
- 2 tablespoons sriracha (adjust based on spice preference)
- 1 tablespoon lime juice
- 1 teaspoon garlic powder
Instructions
- Prepare the Chicken:
- Season the chicken pieces with salt and pepper.
- Make the Bang Bang Sauce:
- In a bowl, combine mayonnaise, sweet chili sauce, honey, sriracha, lime juice, and garlic powder. Whisk until smooth.
- Reserve about 1/4 of the sauce for serving and use the rest for marinating.
- Marinate the Chicken:
- Place the chicken pieces in a large bowl or resealable plastic bag. Pour the Bang Bang sauce over the chicken, making sure each piece is well coated.
- Marinate in the refrigerator for at least 30 minutes, or up to several hours for more flavor.
- Preheat the Grill:
- Preheat your grill to medium-high heat.
- Skewer the Chicken:
- Thread the marinated chicken pieces onto the soaked skewers.
- Grill the Chicken Skewers:
- Grill the chicken skewers for about 10-15 minutes, turning occasionally, until the chicken is cooked through and slightly charred on the edges.
- Serve:
- Serve the Bang Bang Chicken Skewers hot with the reserved sauce for dipping.
