How to Make Pineapple Strawberry Mimosas

Ingredients

  • Champagne or Sparkling Wine: 1 bottle (chilled)
  • Pineapple Juice: 1 cup (chilled)
  • Strawberry Puree: 1/2 cup (see instructions below for making puree)
  • Fresh Strawberries: for garnish
  • Pineapple Slices: for garnish (optional)
  • Mint Leaves: for garnish (optional)

Instructions

Prepare the Strawberry Puree:

  1. Wash and Hull Strawberries: Wash fresh strawberries thoroughly and remove the stems.
  2. Blend Strawberries: Place the strawberries in a blender or food processor and blend until smooth. For a smoother texture, you can strain the puree to remove seeds.
  3. Chill the Puree: Refrigerate the strawberry puree until it’s cold. This helps to keep your mimosa chilled when mixing.

Assemble the Mimosas:

  1. Prepare the Glasses: If you’d like, you can garnish the rim of your champagne flutes with a little sugar for an extra touch of elegance. Simply wet the rim with a piece of pineapple or water and dip it into granulated sugar.
  2. Add Strawberry Puree: Spoon about 1 tablespoon (or more, depending on your preference) of the strawberry puree into each champagne flute.
  3. Add Pineapple Juice: Pour about 2 ounces of pineapple juice into each glass over the strawberry puree.
  4. Top with Champagne: Fill the rest of the glass with chilled champagne or sparkling wine. Pour slowly to prevent it from overflowing.
  5. Garnish and Serve: Garnish with a fresh strawberry on the rim, a slice of pineapple, or a sprig of mint for a refreshing aroma. Serve immediately.
