- 1 1/2 pounds boneless, skinless chicken breasts, cut into 1-inch cubes
- 1/4 cup olive oil
- 1/4 cup freshly grated Parmesan cheese
- 3–4 cloves garlic, minced
- 2 tablespoons fresh lemon juice
- 1 tablespoon fresh parsley, chopped (plus more for garnish)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon red pepper flakes (optional, for added heat)
- Wooden skewers, soaked in water for at least 30 minutes
Instructions
- Marinate the Chicken:
- In a large bowl, combine the olive oil, grated Parmesan, minced garlic, lemon juice, chopped parsley, salt, pepper, and red pepper flakes (if using).
- Add the chicken pieces to the bowl and toss to coat them well with the marinade. Cover and refrigerate for at least 30 minutes, or up to a few hours for more flavor.
- Prepare the Skewers:
- Thread the marinated chicken pieces onto the soaked wooden skewers.
- Preheat the Grill:
- Preheat your grill to medium-high heat. Ensure the grates are clean and lightly oiled.
- Grill the Skewers:
- Grill the chicken skewers for 10-12 minutes, turning occasionally, until the chicken is golden brown and cooked through with an internal temperature of 165°F (75°C).
- Serve:
- Remove the chicken skewers from the grill and let them rest for a few minutes. Garnish with additional chopped parsley and a sprinkle of Parmesan cheese before serving.
