- 1 pound ground chicken
- 1 cup zucchini, grated and excess water squeezed out
- 1/2 cup fresh corn kernels (from about 1 ear of corn)
- 1/4 cup breadcrumbs or panko
- 1 large egg
- 2 tablespoons fresh herbs (like parsley, cilantro, or chives), finely chopped
- 1 garlic clove, minced
- Salt and pepper, to taste
- Olive oil, for cooking
Instructions
- Prepare the Ingredients:
- Grate the zucchini and use a clean kitchen towel or paper towels to squeeze out as much moisture as possible.
- If using corn on the cob, remove the kernels from the cob using a sharp knife.
- Make the Burger Mixture:
- In a large bowl, combine the ground chicken, grated zucchini, fresh corn kernels, breadcrumbs, egg, chopped herbs, minced garlic, salt, and pepper.
- Mix until well combined but avoid overmixing to keep the burgers tender.
- Form the Burgers:
- Divide the mixture into 4-6 portions, depending on the desired size, and shape each portion into a patty.
- Cook the Burgers:
- Heat a drizzle of olive oil in a large skillet or grill pan over medium heat.
- Cook the burgers for 5-6 minutes on each side, or until fully cooked through and golden brown on the outside. The internal temperature should reach 165°F (74°C) for chicken.
- Serve:
- Serve the chicken, zucchini, and corn burgers on buns with your favorite toppings such as lettuce, tomato, onion, avocado, or a dollop of mayonnaise or your preferred sauce.
