- 1 pound steak (such as sirloin or ribeye), cut into 1-inch cubes
- 1 pound baby potatoes, halved or quartered depending on size
- 3 tablespoons olive oil, divided
- Salt and pepper, to taste
- 4 cloves garlic, minced
- 4 tablespoons unsalted butter
- 1 teaspoon fresh thyme or 1/2 teaspoon dried thyme
- Fresh parsley, chopped for garnish
Instructions
- Preheat the Air Fryer:
- Preheat your air fryer to 400°F (200°C).
- Prepare the Potatoes:
- In a bowl, toss the potatoes with 2 tablespoons of olive oil, salt, and pepper.
- Place the potatoes in the air fryer basket and cook for 10-15 minutes, or until they start to become tender and crispy, shaking the basket halfway through cooking.
- Season the Steak:
- While the potatoes are cooking, toss the steak bites with the remaining 1 tablespoon of olive oil, salt, and pepper.
- Cook the Steak:
- Remove the basket and push the potatoes to one side. Add the steak bites to the other side of the air fryer basket.
- Return the basket to the air fryer and cook for an additional 4-6 minutes, or until the steak reaches your desired level of doneness. Shake the basket or use tongs to turn the steak and potatoes halfway through cooking.
- Make the Garlic Butter Sauce:
- While the steak and potatoes are cooking, melt the butter in a small skillet over medium heat.
- Add the minced garlic and thyme, cooking until the garlic is fragrant and slightly golden, about 1-2 minutes. Remove from heat.
- Combine and Serve:
- Transfer the cooked steak and potatoes to a serving dish. Pour the garlic butter sauce over the steak and potatoes, tossing to coat evenly.
- Garnish with chopped fresh parsley before serving.
