How to Make a Strawberry Cheesecake with Brownie Crust

For the Brownie Crust:

  • 1 box brownie mix (prepared according to package instructions)
  • Cooking spray

For the Strawberry Cheesecake Filling:

  • 4 cups fresh strawberries, hulled and sliced
  • 1 cup granulated sugar, divided
  • Three packages (8 ounces each) of softened cream cheese
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1/2 cup all-purpose flour

Instructions

  1. Set your oven’s temperature to the recommended setting on the brownie mix package. Grease a springform pan with cooking spray.
  2. As directed on the packaging, prepare the brownie mix. Pour the brownie batter into the greased springform pan, spreading it evenly to create the crust.
  3. Bake the brownie crust in the preheated oven for the time indicated on the package or until a toothpick inserted into the center comes out with a few moist crumbs.
  4. While the brownie crust is baking, combine sliced strawberries and half of the granulated sugar in a bowl. Allow them to sit for about 15 minutes, releasing their juices.
  5. In a large mixing bowl, beat the softened cream cheese until smooth. Add the remaining sugar and vanilla extract, continuing to beat until well combined.
  6. One egg at a time, beating until each is thoroughly mixed in before adding the next.
  7. Gradually add the flour to the cream cheese mixture, beating until just combined.
  8. Pour the cream cheese filling over the baked brownie crust in the springform pan.
  9. Spoon the macerated strawberries evenly over the cream cheese filling, including some of their juices.
  10. Use a knife to create swirls in the filling for a marbled effect.
  11. Bake the strawberry cheesecake in the oven for about 60-70 minutes or until the center is set. The edges should be slightly golden.
  12. Allow the cheesecake to cool in the pan on a wire rack for at least 2 hours.
  13. Refrigerate the Strawberry Cheesecake with Brownie Crust for several hours or overnight before serving.
  14. Release the sides of the springform pan, slice, and serve the cheesecake chilled. Enjoy the delightful combination of rich brownie crust, creamy cheesecake, and fresh strawberry topping!
