Easy Recipe: Orzo with Feta & Asparagus

Ingredients

  • 1 cup orzo
  • One bunch of asparagus, thinly sliced into small pieces.
  • 1 cup crumbled feta cheese
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

 

Instructions

  1. Cook the orzo according to package instructions. Drain and set aside.
  2. Heat the olive oil in a big skillet over medium heat.. Add the asparagus pieces and sauté until tender-crisp, about 5-7 minutes.
  3. In a large mixing bowl, combine the cooked orzo, sautéed asparagus, crumbled feta, lemon juice, and lemon zest. Toss gently to mix.
  4. Season with salt and pepper to taste. If desired, drizzle with additional olive oil..
  5. Garnish with fresh parsley, if using.
  6. Serve the Orzo with Feta & Asparagus warm as a delightful side dish or a light main course. Enjoy!
