Instructions

  1. In a blender, combine the crepe ingredients – all-purpose flour, eggs, milk, water, melted butter, lemon zest, sugar, and a pinch of salt. Blend until the batter is smooth. Let it rest for at least 30 minutes.
  2. Heat a non-stick skillet or crepe pan over medium heat. Pour a small amount of batter into the pan, swirling it to coat the bottom evenly. Cook for about 1-2 minutes until the edges begin to brown, then flip and cook the other side. Repeat until all the batter is used.
  3. In a bowl, mix together mascarpone cheese, powdered sugar, lemon zest, and fresh lemon juice to create the lemon mascarpone filling.
  4. Spoon a generous portion of the lemon mascarpone filling onto each crepe, spreading it evenly.
  5. Fold or roll the crepes and place them on a serving plate.
  6. Top the Lemon Crepes with additional lemon zest, fresh berries, and a dusting of powdered sugar.
