Instructions

Berry Cake:

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
  2. In a bowl, whisk together all-purpose flour, baking powder, baking soda, and salt. Set aside.
  3. In a large mixing bowl, cream together softened unsalted butter and granulated sugar until light and fluffy.
  4. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with buttermilk, beginning and ending with the dry ingredients. Mix until just combined.
  6. Gently fold in the mixed berries, ensuring even distribution throughout the batter.
  7. Pour the batter into the prepared baking pan, spreading it evenly.

Baking:

  1. Bake in the preheated oven for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  2. Allow the Berry Cake to cool completely in the pan on a wire rack.

Glaze:

  1. In a bowl, whisk together powdered sugar, milk, and vanilla extract until smooth.
  2. Drizzle the glaze over the cooled cake, allowing it to set for a few minutes.
