Instructions
- Preheat the Oven and Prepare Baking Sheet:
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
- Mix Dry Ingredients:
- In a large bowl, whisk together almond flour, coconut flour, baking soda, and salt.
- Combine Wet Ingredients:
- In a separate bowl, mix the melted coconut oil, maple syrup, egg, and vanilla extract until well combined.
- Combine Wet and Dry Ingredients:
- Gradually add the wet ingredients to the dry ingredients, stirring until the mixture is well combined. It may seem a bit wetter than traditional cookie dough, but the coconut flour will absorb moisture as it sits.
- Add Chocolate Chips and Optional Nuts:
- Fold in the dark chocolate chips and optional chopped nuts until evenly distributed throughout the dough.
- Form the Cookies:
- Using a tablespoon or cookie scoop, drop dough onto the prepared baking sheet, leaving enough space between each cookie. Slightly flatten the tops with the back of a spoon or your fingers, as these cookies may not spread as much as traditional ones.
- Bake:
- Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden and the cookies are set.
- Cool:
- Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
