  • 1 pound penne pasta
  • 2 cups broccoli florets

  • 23 tablespoons Cajun seasoning (adjust to taste)
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • 1/2 cup dry white wine, such as Chardonnay
  • 2 cups heavy cream
  • 8 ounces Parmesan cheese, shredded, plus more for garnish

Instructions

  1. Preheat the oven to 200°F.
  2. In a large pot, bring 4 quarts of water and 1 tablespoon of salt to a boil. Add the pasta and cook until al dente, about 9 minutes.
  3. Carefully remove the pasta from the pot and leave the pasta cooking water in the pot.
  4. Return the pasta cooking water to a boil. Add the broccoli and blanch until just tender and bright green, about 1 to 2 minutes.
  5. Immediately drain the broccoli and plunge it into a bowl of ice water to stop the cooking and set the color.
  6. Sprinkle both sides of the chicken generously with Cajun seasoning.
  7. In a large skillet, heat oil until shimmering. Add the chicken to the skillet in a single layer and cook, flipping once, until the temperature on an internal thermometer reaches 165°F, about 5 minutes on each side.
  8. Cover a clean baking sheet or oven-safe plate with foil. Place in the oven to keep warm.
  9. When the chicken is to temperature, place it on the baking sheet in the oven to keep warm.
  10. Return the skillet to the stove and melt butter until foaming over medium-high heat.
  11. Stir in garlic until fragrant, about 30 seconds.
  12. Whisk in wine to deglaze the pan. Simmer until the sauce has reduced by half, about 2 minutes (your pan is hot at this point so it should not take long).
  13. Whisk in cream and simmer until slightly thickened, about 2 minutes.
  14. Fold in Parmesan cheese.
  15. Season to taste with salt and pepper.
  16. Return pasta to skillet and toss gently to coat.
  17. In the skillet or in a large, warmed serving bowl, pile broccoli on top of pasta, top with chicken, and garnish with more Parmesan cheese.
